|5 cups romaine (torn)|
|5 cups red leaf lettuce (torn)|
|1 whole red apple (chopped)|
|1 whole green apple (chopped)|
|1 cup gorgonzola (crumbled)|
|1/2 cup walnuts (chopped, toasted)|
|1/3 cup red onion (thin sliced)|
|1/3 cup dried cherries|
|3/4 cup apple cider|
|3 tsbl cider vinegar|
|2 tsp honey|
|1/4 tsp kosher salt|
|1/4 tsp ground pepper|
|1/4 cup walnut oil (or canola)|
In a salad bowl, combine the first eight ingredients.
In a small bowl, whisk the cider, vinegar, honey, salt and pepper; gradually whisk in oil. Drizzle over salad; toss to coat. Serve immediately.
