Apple Walnut Salad

Apple Walnut Salad -

5 cups romaine (torn)
5 cups red leaf lettuce (torn)
1 whole red apple (chopped)
1 whole green apple (chopped)
1 cup gorgonzola (crumbled)
1/2 cup walnuts (chopped, toasted)
1/3 cup red onion (thin sliced)
1/3 cup dried cherries
3/4 cup apple cider
3 tsbl cider vinegar
2 tsp honey
1/4 tsp kosher salt
1/4 tsp ground pepper
1/4 cup walnut oil (or canola)


In a salad bowl, combine the first eight ingredients.

In a small bowl, whisk the cider, vinegar, honey, salt and pepper; gradually whisk in oil. Drizzle over salad; toss to coat. Serve immediately.
